20 Recipes to Finish Off Your Summer Produce!
Hello readers with too many veggies,
It's officially fall now, and a new season = new seasonal foods! But what if you've got lingering summer produce? Well have I got some recipes for you!
A few weeks ago I joined a local CSA, and it's been two solid weeks of so many fresh veggies that I don't know what to do with myself! (And I have another box waiting for me when I get home today too!) I've encountered some firsts along the journey; I had eggplant for the first time (no judging), and I am about to try my hand at zucchini bread! So I've been hunting for recipes to use up all these great, fresh ingredients, and today I'm sharing my faves, and the ones that look the most exciting, with you!
In the past two weeks, I've received: 3 eggplant, 7 or so zucchini, 8-10 summer squash, 7 or 8 tomatoes, 2 sweet onions, a dozen or more small potatoes, 5 small cucumbers, 5 apples, close to 2lbs of okra, 8oz of honey, and 5 or so small bell peppers. It is definitely a LOT of food for just my partner and I! And a lot of this stuff is outside my range of ingredients so its harder to mix in with the normal cooking we do.
I have plans to pickle the okra and the cucumbers, but I've been trying to put pressure on myself to use the rest of it each week before I get a new box. I never do, but that's my goal anyway.
ANYWAY... I've pulled together a list of recipes, focusing on the three ingredients I have the least experience with. Most of these I have not made, but come from sources I have a ton of faith in. I'll update you when I do sit down and make some of these. For now, ON TO THE RECIPES!
Baked Orzo with Eggplant and Mozzarella via Smitten Kitchen
Lets start this list off strong! This looks just good and filling! Though probably above my skill level...
Roasted Eggplant Soup via Smitten Kitchen
The eggplant I have is at the end of its life, so soup seems like the best use of it. And it should be easy to freeze and save for when the season is over!
Smoky Eggplant Dip via Smitten Kitchen
It seems like a hummus dip but with eggplant, and looks kinda too fantastic to be true.
Eggplant Parmesan via Budget Bytes
I made a recipe from AllRecipes when I tried making eggplant Parmesan, but this one looks way better!

Ummmm Mashed Potatoes and ANYTHING sounds uh.mazing I cant wait to try this one!

Sweet Corn Polenta with Eggplant Sauce via Food 52
OK, so when I saw the picture I thought it was an eggplant sauce over cheese grits. I suppose polenta is better for you, but I say definitely try it over grits! Yummm

I tried to include meals that weren't based around zucchini too. This could be great to use up some lingering zucchini.
Grilled Zucchini Boats with Beef and Cheddar via The Kitchn
I'll be making this one tomorrow for the game. It's a nice mix of healthy, and meaty, cheesy, goodness. Wee!
UPDATE: These are definitely a winner!! Everyone raved about them. (I say everyone, there were only 3 of us.) And so simple to do too. Maybe takes 20 minutes total to prepare and cook. These are going to be in rotation for sure! And I only used 2 medium-large yellow zucchini for 3 people. We had them with the squash mac & cheese below, so I figured one per person.

I am not vegetarian, but I love me some unconventional burgers. Shrimp, crap, black bean, bring them on!

These cursed, beautiful pictures from Food 52! I assumed it was a pizza topped with squash, which I would totally try! Tart may appeal to some of you out there, but I'm going to try my hand at adapting this for pizza.
Summer Vegetable Mac and Cheese via Ezra Pound Cake
You mean I found a "healthy" mac and cheese? I'm all over it!
UPDATE: Made it this weekend and it is sooo good! I didn't use any broccoli and doubled the squash, and used big shells instead of elbows cause I like shells the best, and it was fantastic! It also makes a lot! I only baked what fit in a 9x9 glass dish (around half, which would probably feed 2-4 as a main course) and I'll have the other half (or more) as leftovers for lunch and dinner this coming week.
Mexican Zucchini (and Squash) Cheese Soup via All Recipes
Another soup, and it uses up two of my difficult ingredients, and its Mexican, and I looove Mexican.
UPDATE: I made it this week with what I had on hand, and I need to tweak it still, but its got great potential! (I definitely recommend adding a meat/protein source.) If I make it again, I'm using less broth, and adding shredded chicken.
Well there is my list of recipes for, what I think, are pretty ignored or underused veggies. I know for a fact, that if they weren't being delivered to my front door, I would have never tried any of them. I can't wait to get home and see what today's box brought me!
